A warm, aromatic tea combining fresh ginger and honey. Makes 1 cup.
Ingredients
1 cup water, 1–1½ inch fresh ginger, thinly sliced or grated, 1 tsp black tea leaves or 1 tea bag
1–2 tsp pure honey, 1 tsp fresh lemon juice — optional, 1 small cinnamon stick — optional
Method
1. Boil the ginger:
Add water and fresh ginger to a saucepan. Simmer for 4-5 minutes.
2. Add tea:
Add the black tea leaves and simmer for another 1-2 minutes.
3. Strain:
Strain the tea into a cup.
4. Add honey:
Let the tea cool slightly, then stir in 1-2 tsp honey.
5. Finish:
Add lemon juice if desired.
Best Taste
For a stronger ginger flavour, use 11/2 inches of freshly grated ginger and simmer for 5 minutes.
Tip
Add honey after removing the tea from the heat rather than boiling the honey with the tea.
