Paneer Shashlik Recipe

Ingredients

For the Paneer

250 g paneer, cut into large cubes, 1 medium onion, cut into chunks, 1 green capsicum, cut into chunks, 1 red/yellow bell pepper, cut into chunks, 2 tbsp thick yogurt/Greek yogurt, 1 tbsp fresh cream, 1 tbsp ginger-garlic paste, 1 tbsp lemon juice, 1 tsp Kashmiri red chilli powder, ½ tsp turmeric, 1 tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala, ½ tsp black pepper, 1 tbsp cornflour, 1 tbsp oil, Salt to taste

For the Shashlik Sauce

1 tbsp butter, 1 tbsp tomato ketchup, 1 tbsp chilli sauce, 1 tsp soy sauce, 1 tsp honey, ½ tsp Kashmiri chilli powder, 2 tbsp water

Method

1. Marinate the paneer

In a large bowl, combine yogurt, cream, ginger-garlic paste, lemon juice, all the spices, cornflour, oil and salt.

Add paneer, onion and capsicum. Mix gently so the paneer doesn’t break.

Cover and marinate for at least 30 minutes. For better flavour, marinate for 2–4 hours in the refrigerator.

2. Prepare the skewers

Thread the ingredients onto skewers:

Paneer → onion → capsicum → paneer → onion → capsicum

If using wooden skewers, soak them in water for about 20–30 minutes first.

3. Grill

Heat a grill pan or tawa on medium-high heat. Brush with a little oil.

Place the skewers and cook, turning regularly, until the paneer and vegetables develop light golden-brown/charred edges.

This usually takes around 8–10 minutes.

You can also grill them in an oven at around 220°C for 10–15 minutes, turning halfway.

Shashlik Sauce

  1. Heat butter in a small pan.
  2. Add ketchup, chilli sauce, soy sauce, honey and Kashmiri chilli
    powder.
  3. Add 2 tbsp water and simmer for 1–2 minutes.
  4. Brush this sauce over the grilled shashlik.

Restaurant-Style Secret

For that smoky tandoori/shashlik flavour, after grilling, place a small piece of hot charcoal in a heatproof bowl inside the serving dish. Add ½ tsp ghee, cover immediately for 1–2 minutes, then remove the charcoal.

Serve with mint chutney, onion rings and lemon wedges.

It’s a beneficial oil to help slow things down to take stock of your feelings and emotions.
